Hearty White Bean and Kale Soup

 

This hearty vegetarian stock is gluten-free and packed with vitamins and fiber. Allow the ingredients to simmer together, in order, and feel free to throw in your favorite soup items, such as purple potatoes or Swiss chard.  

6 cups chicken stock

2-3 Tablespoons olive oil

2 15-ounce cans of cooked Cannellini beans

1 cup diced red onion

4 carrots, chopped

3 stalks of celery, chopped

1 large bunch of rinsed kale

½ teaspoon lemon juice

1 Tablespoon chopped parsley

Salt and pepper to taste

1 Tablespoon grated Parmesan cheese to top each bowl
